Seasame is one of the oldest cultivated plants in the world. Today India is the world's largest producers of seasame. The world on an average produces close to 3 millions tons of seasame seed every year Around 80% of the sesame seed production in India, happens during the khariif season (June-July to September-October), with the crop starting to arrive from September. The remaining crop is cultivated in the rabi season (December to March), with the crop starting to arrive from March.
Sesame seeds (approximately 50% oil and 25% protein) are used in bakery and confecttionary, candy making and other food industries. Oil from the seed is used in cooking, salad oils, margarine and contains about 47% oleic acid and 39% linoleic acid. Foods fried in sesame oil have a long shelf life because the oil contains an antioxident called "Sasamol". The oil can be used in the manufacture of soaps, paints, perfumes, pharmaceuticals and insecticides.
